This woman was waving a turkey leg out of her food trailer. When someone came up to buy one, she said, “Let me get you a fresh one hon, this is my demo model, I’ve been waving it out this window for hours.”

Glonoushistory

Sam drove two friends from work, Duane and Cheryl, out for Asian food at lunch. They argued on the way – about if the restaurant was primarily Vietnamese or Chinese. It had a wide variety of food on the menu, primarily Chinese, but the neighborhood was mostly Vietnamese. They decided on a way to settle the argument. After they parked they walked around the back, huddled next to the overflowing recycled grease container and pushed the kitchen door open. They stuck their heads in a little, keeping hidden but enough to hear the conversation between the cooks. All three were pretty sure they could tell the difference between Chinese and Vietnamese, even if they didn’t speak the languages.

What they heard was Spanish.

“What the hell,” Duane said, “they have Mexicans cooking.”

“I’ve heard that,” Cheryl said. “Most of the Asian places hire Mexican workers in their kitchens. I never believed it until now.”

They decided it didn’t really matter at all so they walked around to the front and were shown to a table.

They had fun looking through the higher numbered items, such as No. 134- Fish Ball with Sea Slug, but decided top pass on anything unusual. They waved the woman away with the Dim Sum cart. It was lunch specials today, No. 6 for Sam and Cheryl, No. 10 for Duane.

They enjoyed the wrapper on their chopsticks. On one side were actual instructions on holding and using and on the other side a great little piece of literature:

And cultual.

They liked the way that Nice Chinese Food With Chopsticks was capitalized. They liked the little misspelled sentence fragment at the end. They especially loved learning the new word, glonoushistory.

What did it mean? It is in no dictionary they had access to. Cheryl pulled out her phone and all the hits it returned were in regard to the chopsticks.

“So it must be a new word,” Cheryl said. “From the context it is obviously intended to mean the food, cooking, serving and eating habits of a culture. A word made by combining history with nourishment, with a glo thrown in the front for good measure. I can’t think of any other word that quite means the same thing.”

Duane said, “I can think of examples of use: ‘Jeez, I can’t believe you’re eating that greasy hamburger!’ ‘Get off my case, burgers are essential to my sense of glonoushistory.’”

“’Twirl your spaghetti on a fork! Don’t suck it up like a straw.’ ‘Are you criticizing my glonoushistory?’” added Sam.

Cheryl said, “I imagine small eastern liberal-arts colleges establishing departments of Glonoushistory. Professors of Glonoushistory, getting research grants and traveling to Central Asia to catalog the preparation of boiled Yak and fermented Camel Milk beverages. The chorus of complaining when the first graduating class majoring in Glonoushistory realizes they have completed a course of study actually targeting them straight to the fast-food industry.”

The three had a good laugh and then their food came. They broke off the chopsticks and dug in. Sam smoothed the cover out, folded it, and placed it in his pocket. He wanted to tape it into his journal that evening so he could remember the fun lunch with his two friends. He forgot to do that, of course. A month later, after several washings, he’d find the little wadded up remains in his pants pocket and not be able to figure out what it was.

Stuffed and worried about getting sleepy in the afternoon – there was a lot of work to be done – they piled into Sam’s car for the short drive back to the office. Cheryl sat up front, Duane in the back. There were some grocery bags bag there and Duane absentmindedly poked around in them. They were full of canned food, there was even a grocery receipt, but the cans were all silver steel – no labels.

“What the hell, Sam,” said Duane.

“Oh, I buy canned food, mostly vegetables. It’s cheap. And then I peel the labels off and leave the cans in the car for a couple days – to make sure I forget what’s in them, before I put ‘em in the cupboard.”

“Why?” asked Cheryl.

“Life is too predictable.”

Another Christmas, Another Bowl of Pho

Everyone has their Christmas traditions. I’ve been keeping this incarnation of a blog since 2011 and we went to Bistro B for Christmas that year, so it’s been at least seven years. I think this is the first year we actually received what we ordered.

Nothing much has changed, so I’ll copy what I wrote then. The only difference is this year I ordered #33 Special Pho with Sunny Egg, and #395, Vietnamese Iced Coffee – in addition to a shared double order of #9 – Vietnamese Spring Rolls.

The wrapping paper has been rent and Santa has been sated. The day now stretches sleepily on – sports on television, fudge on the kitchen table, a cold, gray spitting rain day outside. What is there to do other than lounge around in a mouldering Snuggie® and watch the entropy increase?

For my dollar, there is no better way to spend a few hours on the Christmas Holiday than to go for an afternoon lunch at Bistro B. Actually, I like the pho at Pho Pasteur near our house (the broth is just right) but Bistro B is such a hopping place, even on a holiday, that is impossible to pass up. Plus, Pho Pasteur isn’t open on Christmas Day.

The place, as always, was packed. We waited for a few minutes, which I enjoyed. I stood by the little altar with the burning incense spiral, the electric-powered prayer wheels, and the little shrines decorated with offerings of change. I looked around at the tables to see what other folks were ordering. There were a lot of butane portable table burners heating hot pots that were being shared by a whole family – three generations or more – packed around the big round tables. I love watching a family eat, the heads bent, concentrating on the food, with a ballet of chopsticks dancing in a circular chorus while everyone picks up their food, talks, and laughs.

Its a noisy, happy place, with an army of black-clad waiters rushing, cleanup crews pushing a big square cart, a thick crowd at the registers – some clutching inscrutable bills, but most there for take-out. Some odd genre of electronic dance music pulses… loud but barely audible over the conversations, and a phalanx of flat-screen televisions incongruously simultaneously shine out an NFL documentary. The kids reported that the restroom was, “Like a nightclub.”

It didn’t take long before we were seated and began to attack the menu. There are too many choices at Bistro B – the menu is a little spiral bound plastic laminated book, with page after page of wonders, many with photographs of the food. It is intimidating. Lee recommended shutting my eyes, thumbing through the menu blindly, and then picking something at random. He said he did that a couple of times – once he had something good, but the second time the waiter had told him, “No, you don’t want to order that.” I tried it and came up with Chicken Curry… no, too tame.

The menu items are numbered and the numbers go up 523 – though there seems to be some gaps here and there.

It was cold outside so I thought about some hot soup. I ordered the #43, Special Bistro B Noodle Soup. The waiter asked what type of noodles and I asked for rice. The kids had smoothies and Candy and I hot tea. Nick had Pho, Candy and Lee had chicken. We sent for a couple orders of spring rolls… it was too much food.

But it was delicious. My Special Bistro B Noodle Soup didn’t have the perfect simple balance of subtle flavors that I like in Pho – but it was like eating a Forest Gump box o’ chocolates – you never know what you are going to get. Every time my chopsticks would dive into the spice-murked liquid they would emerge with a new surprise. After eating whatever came to the surface – I was able to figure out more or less what it was about half of the time.

Like all Pho – serving places, the table was equipped with a bounty of condiments and additions. Plates of bean sprouts, sliced jalapeño, Thai basil, and cilantro. Bottles of soy sauce, fish sauce, rooster sauce, hoisin, and two unlabeled bottles of mysterious somethings. Plus little containers of chopped garlic, pepper oil, and the most flavorful (and hot) chili paste I’ve had in a long time. I spent some time working on the flavor balance of hot and sweet, salty and savory, in my broth. Then I used the hoisin and rooster sauce to draw a bright red and dark caramel ying-yang symbol (for good luck in the coming year) in one of the little plates they supply and used my chopsticks to dip various morsels in there before I ate them.

I ate ’till I was full and then I ate some more. And it was good.

There was a separate menu on our table that outlined the group meals. We thought about the dinner for four – but there were too many fish items on it for Candy. They had a dinner for ten that looked fabulous. I need to get ten people together to go down and do it. That sounds like a plan. Drop me an email if you want in.

We were earlier than we usually were – so the place wasn’t completely packed. The menus were new – the numbers only going up to 494. And in the last six years the restroom extravaganza has been toned down more than a bit.

As always, the Christmas-day service was a little rough. There is a new “Taco” section in the menu – Candy ordered one of those. “Oh, I’m sorry, that’s new, we haven’t learned how to cook those yet,” was the answer from the waiter. Candy ordered chicken, Nick, Lee, and I ordered Pho. The chicken arrived quickly, but no Pho. A while later, the waiter came by and asked how everything was. “No pho,” we answered. He looked flustered and our three enormous bowls of soup came out in a minute. That’s cool – usually we don’t even get what we order – a busy place with a book for a menu and 494 items – you have to chill a bit.

After our food we drove across the city for our second Christmas Tradition – to see a movie. It’s getting so that we will only see films at the Alamo Drafthouse (their no phone-no talking-no arriving late or you will be thrown out is a game-changer) and we took in I,Tonya at the Alamo in the Cedars. They have a nice bar upstairs with a killer view of downtown Dallas.

Food Truck in Richardson

I live in Richardson, Texas – a first-ring suburb of the enormous Dallas-Fort Worth Metroplex. For the last year or so, I have been enjoying tracking down the various Gourmet Food Trucks that wander the highways and byways. I have been finding them at various locations – mostly in the Dallas Arts District – but have yet to have one show up in my own hometown.

The one struggle for the Food Trucks all over the country is finding locations to park. The owners of brick and mortar restaurants traditionally have a lot of political clout and are always working to enact harassing regulations designed to eliminate the portable competition. I have plenty of sympathy for restaurant owners – that has to be one of the hardest ways to make a living – but I think they are mistaken. The food trucks are mostly a quality replacement for fast food plus they get people used to eating out more. I don’t think the food trucks are a serious threat to quality restaurants.

So I was excited when I left work and checked my social media and found out that the Nammi Food Truck (one of my favorites – First Visit Second Visit) was going to be setting up for dinner in Richardson. They were going to be at the RunOn! store at Campbell and Coit – not very close to my house – but I wanted to support a truck coming out to my town. The Nammi Truck serves Vietnamese Banh Mi sandwiches, rice bowls, and fusion tacos. I drove home, checked with Candy and decided what to get, and then drove out to RunOn!.

That store brings back a lot of memories. When Lee was younger we used to drive him out there for running lessons. I used to kid him about “lessons” – I’d say, “Left, Right, Left, Right… how hard can it be?” It worked though – the direction and practice Lee received helped him become a good and enthusiastic long-distance runner.

While he would run I would hang out at the Starbucks or wander around the shopping center. There is a lot of interesting stuff around that intersection.

Tonight there was a recreational run going on with a nice little crowd of runners outside the store, stretching, talking, hanging out, and getting ready to head out together. Saucony was there with a truck loaning out test shoes (WTF?) and promoting their products. They had an Xbox Kinect hooked up on the back of their truck and the runners would take turn playing track and field games – running in place, jumping, and throwing a virtual javelin. It looked like a lot of fun… I’m an old fart and had never seen the Xbox Kinect working before.

There was a continuous short line at the Nammi Food Truck. I waited my turn and ordered a BBQ Pork Banh Mi sandwich (these are big sandwiches and Candy and I would share it) plus a lemongrass chicken taco and a beef taco. It didn’t take long and I took the stuff home for dinner.

As always, it was good.

Oh, and it was food truck heaven in the Dallas Arts District! I was hungry and the trucks were arranged all up and down Flora Street. So much food and so little time.

Mae West said, “When choosing between two evils, I always like to try the one I’ve never tried before.” That always seemed to be good advice to me. So in choosing between six food trucks, I decided to eat one I’ve never tried before (by the end of the day, I had tried three).

I picked out The Nammi Food Truck. I wanted some Vietnamese food! I wanted some Banh Mi.

No Fried Egg Today

A BBQ pork sandwich and a drink was the ticket.

There were plenty of customers hanging around, but the food came quick.

They had some sauces in squeeze bottles down in the ice in the front compartment – spicy mayo, cucumber (I think), and Sriracha. I filled ramekins with cucumber and rooster sauce.

The sandwich was huge and stuffed with stuff. One woman at another table was gesturing at her sandwich and yelling, “It’s bigger than my arm!” My only complaint was that I didn’t open the paper carefully enough and too much stuff fell out. It was really good. I want to go get another.

A couple sat next to me eating their Banh Mi. The sandwiches are on the messy side. Some of the good stuff spills out and falls on the ground.

Luckily the cleaning crew is right there to hop on things right away and fly away with the leftovers.
